Copenhagen Market is a Danish heirloom introduced by H. Hartman & Co. in 1909. This early variety forms round, solid heads weighing 1.4-1.8kg (3-4lb) and measuring 15-20cm (6-8") in diameter, making it one of the largest early round cabbages for summer harvest.
This summer harvest variety has good keeping ability, excellent uniformity, and rich flavour. This variety is outstanding for coleslaw. It's a popular market variety that has the added benefit of shipping very well. A very popular variety for our area in the north, especially for all the cabbage roll makers.
Matures in 65-75 days
Sow indoors and transplant outdoors from 2 weeks after the last frost date to early summer. Optimal soil temperature: 10-30°C (50-85°F). Seeds should germinate in 7-10 days.
When learning how to grow cabbage, sow 3 or 4 seeds per pot, 5mm (¼”) deep, under very bright light. Thin to the strongest plant. Space transplants 45-60cm (18-24″) apart in rows 60-90cm (24-36″) apart.
Grower note: Highly recommend using our worm casting products at planting or as a foliage application during growing season to prevent pest pressure (it’s what we do on the Hotchkiss Flower Farm to combat pests). Alternatively, floating row cover is recommended to have success growing all brassicas in our climate against cabbage worms.
